Background of the Study
Food hygiene practices are crucial in preventing foodborne illnesses, particularly gastrointestinal infections caused by bacteria, viruses, and parasites. In Kaduna State, poor food hygiene is a major public health concern, with many households and food vendors lacking the necessary facilities and knowledge to ensure safe food preparation and storage. Inadequate handwashing, improper food handling, and unsanitary cooking environments contribute to the contamination of food, leading to outbreaks of gastrointestinal infections such as salmonellosis, E. coli infections, and cholera (Aliyu, 2023).

These infections result in significant morbidity, particularly among children, the elderly, and immunocompromised individuals. Poor hygiene practices not only affect individual health but also place a substantial burden on the healthcare system and the economy due to increased medical expenses and lost productivity. In Kaduna State, rapid urbanization and overcrowding in urban centers exacerbate these challenges, as food is often prepared in informal settings with limited oversight (Ibrahim, 2024).

While various interventions have been introduced to improve food safety, including public health campaigns and regulatory measures, their effectiveness in curbing poor hygiene practices remains uncertain. The lack of standardized hygiene protocols among food vendors and households further complicates efforts to control gastrointestinal infections. This study aims to evaluate the impact of poor food hygiene practices on the prevalence of gastrointestinal infections in Kaduna State by analyzing incidence rates from healthcare facilities, assessing hygiene practices through surveys, and identifying key factors contributing to poor food safety (Bello, 2023).

Statement of the Problem
Gastrointestinal infections in Kaduna State continue to pose a significant public health challenge, primarily due to poor food hygiene practices. Many food vendors and households do not adhere to recommended hygiene protocols, resulting in the contamination of food and water. This issue leads to frequent outbreaks of diseases such as diarrhea, cholera, and other enteric infections, which disproportionately affect vulnerable populations like children and the elderly (Aliyu, 2023). Despite ongoing public health efforts, the persistent high incidence of these infections suggests that current interventions are inadequate.

The problem is compounded by the lack of proper sanitation facilities, insufficient public awareness, and limited enforcement of food safety regulations. Additionally, rapid urbanization and the proliferation of informal food markets exacerbate the situation, as these environments often lack basic hygiene standards. The failure to control gastrointestinal infections not only increases healthcare costs but also undermines community productivity and overall quality of life (Ibrahim, 2024).

This study seeks to address these issues by systematically evaluating the correlation between food hygiene practices and gastrointestinal infection rates in Kaduna State. Through a combination of quantitative analysis of healthcare data and qualitative surveys of food vendors and households, the research will identify the key hygiene deficiencies contributing to disease transmission. The findings will be critical in informing the development of more effective public health policies and interventions to reduce the burden of gastrointestinal infections.

  • H3: Targeted hygiene interventions will significantly reduce the incidence of gastrointestinal infections.

Scope and Limitations of the Study
This study focuses on urban and peri-urban areas in Kaduna State. Data will be gathered from healthcare records, hygiene surveys, and observational studies. Limitations include potential self-reporting biases and regional variability in hygiene practices.
